Veggies

I have never been a big fan of veggies, but I have been trying them in different ways lately so I am eating them more.

I chop the veggies up into small pieces and that makes it a lot easier to mix them in stir-fry, put them in salads, etc.  It is really easy with a food processor!  Just cut the veggies into fist-sized chunks before putting them into the food processor.

I usually buy the veggies on Sunday and then chop them up and that way they are easy to use during the week, stored in handy plastic containers.

purple cabbage--if you have a family it's great, but for one or two people you only really need half the cabbage...unfortunately they only sell them in whole sizes.  Core the cabbage (cut out the middle part) and just use the outer purple parts.

green, yellow, orange, and red bell peppers -- make sure to take out the top stem and the seeds.

brussel sprouts--these are really like mini-green cabbages; who knew?  Just take out the middle core and slice up the rest.

carrots--peeled or not, wash them if you aren't going to peel them.  Just cut off the tops and chop into chunks for the food processor.

broccoli--just use the heads and chop them into small chunks

onions--a little goes a long way, easy to chop in the processor and won't make you cry

Peas--Snow peas, sugar snap peas, whatever you call them....

Zucchini --- green, yellow, any kind of squash will work.

tomatoes are good, too, but I wouldn't chop them ahead of time as they will be mushy.

You can use almost any vegy you can think of this way.
