Salad

This is the salad that Dr. Pratt encourages us to eat every day or twice a day. It's a big salad for me!

This was at commercialappeal.com so I just copied it from them

SUPERFOODS RX SALAD
1 cup spinach, torn in bite-size pieces

1 cup chopped romaine

1/4 cup shredded red cabbage

1/2 cup sliced red bell pepper

1/2 tomato, chopped

1/4 cup chickpeas; if canned, rinse well

1/2 cup grated carrot

1/4 avocado, cubed

2 tbsp. extra virgin olive oil

1 tsp. balsamic vinegar

Combine all ingredients except olive oil and vinegar in a bowl. In a separate bowl, whisk oil and vinegar. Toss with dressing just before serving. Serves 1.

I hate garbanzo beans served in this fashion, and I am allergic to avocado, so I substitute sunflower seeds and either green bell pepper or broccoli.  I'll bet orange slices would taste good, too.
