From my good friend Kathy!
Sprinkle 4 chicken thighs with 1/2 teaspoon of taco seasoning mix on each side, put in a baking dish, and smother with 1 cup of salsa and bake at 375 for 50 minutes. (oven times vary; mine takes an hour and a half) Use a meat thermometer to make sure the chicken is cooked all the way through. It should read 165° Fahrenheit (75° Celsius).
Then pull it out and sprinkle with 1 cup of shredded cheese and pop it back in the oven for 3 minutes just to melt the cheese.
To make it gluten free, just make sure the taco seasoning mix, salsa and cheese are all GF.
NOTE: You don't have to follow these exact measurements; you can just pour as much salsa or cheese as you want on it. That's what I do!
