Rosalys' Meat Loaf
This is my mother-in-law's recipe.
Simmer one large carrot, in small cubes, in 1/2 Cup water 15-20 minutes.
Combine 2 lbs. ground beef, 1 Cup toast crumbs, 1/2 C. water 1 T. parsley, 1/4 t. thyme, 1/4 t. nutmeg, salt and pepper to taste, in a mixing bowl.
Saute 1 finely chopped onion and 1 mashed clove garlic in 2 T. butter. Add to the carrots with the water they boiled and add rest of ingredients.
Knead together until light and springy. Add more water if necessary. Bake uncovered in loaf pan at 350 degrees for an hour or so.
This is an egg-free, tomato-free recipe. You can make it gluten free by using gluten free bread for the toast crumbs.
