Banana Dessert

Serving Size: For one person

I am allergic to flour and all foods with gluten; this is gluten-free.

In a bowl mash two cookies (I use Enjoy Life Soft-Baked Snickerdoodles, 21 grams carbs for those two). Slice half a banana on top of the cookies. Sprinkle with cinnamon and Splenda. Slice butter thinly and put slices on top of it (don't need to use too much).

Heat in microwave until butter is melted and a bit bubbly.

Cover with sugar-free whipped cream (I get this at Whole Foods).

It is also good with ice cream or other added fruit.

It makes a nice little dessert after my meat or salad. Kind of like bananas foster.

If you don't like mushy desserts, it would taste fine cold; leave out the butter or melt it separately and pour on. This is also good with any kind of banana, whether slightly unripe or a little too ripe.
